Either way, these Soft & Buttery Apple Crumble Bars are my go‑to “I want something cozy but also don’t want to spend three hours in the kitchen” treat. They taste like apple crisp and a cookie bar had a very delicious baby… and honestly, who’s saying no to that?

They’re soft, buttery, cinnamon‑spiced, and packed with tender apples — basically everything we love about apple pie, but in a handheld bar that’s perfect for lunchboxes, after‑school snacks, or cozy weekend baking. Ingredients

For the Crumble Base + Topping

  • 1 cup unsalted butter, melted
  • 1 cup brown sugar
  • 2 cups all‑purpose flour
  • 1 ½ cups old‑fashioned oats
  • 1 tsp cinnamon
  • ½ tsp salt
  • 1 tsp vanilla extract

For the Apple Filling

  • 4 cups diced apples (Honeycrisp, Gala, or Fuji)
  • ⅓ cup brown sugar
  • 1 tbsp lemon juice
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • 2 tbsp cornstarch

Instructions

1. Prep the Pan

Line a 9×13 baking dish with parchment. Preheat oven to 350°F.

2. Make the Crumble Mixture

In a large bowl, mix melted butter, brown sugar, flour, oats, cinnamon, salt, and vanilla. It should look like soft, sandy crumble.

Press half the mixture firmly into the bottom of the pan.

3. Make the Apple Filling

In another bowl, toss apples with brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch.

Spread the apple mixture evenly over the crust.

4. Add the Crumble Topping

Sprinkle the remaining crumble mixture over the apples.

5. Bake

Bake for 40–45 minutes, until golden and bubbling at the edges.

6. Cool + Slice

Let cool completely for clean bars. Warm slices are amazing too — no judgment.
