September is that magical in-between month—when the pool floats are deflating, the backpacks are already sticky, and you’re not quite ready to commit to pumpkin spice everything. Last week, our neighbor texted us out of the blue: “Cornhole tournament in the backyard tonight—bring a snack and you’re A-game!”
I had no time to run to the store, no energy for anything elaborate, and just enough corn in the fridge to make something happen. Enter: Street Corn Dip. It’s creamy, smoky, tangy, and just spicy enough to make people say, “Wait, what is this and why haven’t I had it before?”
I brought it warm in a dish wrapped in a kitchen towel (because moms improvise), and within minutes, it was gone. The dip, not the towel. Though I wouldn’t put it past our black lab to sneak off with both.
Whether you’re hosting a last-minute hangout, packing a tailgate treat, or just need something to scoop into while hiding from homework duty, this dip delivers.
Ingredients:
- 1 bag frozen fire-roasted corn (or 2 cups grilled corn kernels)
- ½ cup mayonnaise
- ½ cup sour cream
- Juice of 1 lime
- 1 tsp chili powder
- Salt and pepper to taste
- ½ cup crumbled cotija cheese (or feta if that’s what you’ve got)
- Chopped cilantro for flair
- Optional: diced jalapeño for heat, crushed tortilla chips for crunch
Instructions:
Sauté the corn in a pan until lightly charred and sizzling.

In a bowl, mix mayo, sour cream, lime juice, chili powder, salt, and pepper.

Stir in the corn, cheese, and any optional additions.
Top with cilantro and a high-five from your child who “helped by tasting everything.”

Serve warm or chilled with tortilla chips, veggie sticks… or straight from the bowl with a spoon. No judgment.

Was looking for a great recipe to add to my food options on game day. Football, food and beer what a great combo. Saw this street corn dip. Our family loves dips.
