Ingredients

  • 1 bag frozen fire-roasted corn or 2 cups grilled corn kernels
  • ½ cup mayonnaise
  • ½ cup sour cream
  • Juice of 1 lime
  • 1 tsp chili powder
  • Salt and pepper to taste
  • ½ cup crumbled cotija cheese or feta if that’s what you’ve got
  • Chopped cilantro
  • Optional: diced jalapeño for heat, crushed tortilla chips for crunch

Instructions

  • Sauté the corn in a pan until lightly charred and sizzling.
  • In a bowl, mix mayo, sour cream, lime juice, chili powder, salt, and pepper.
  • Stir in the corn, cheese, and any optional additions.
  • Top with cilantro.
