- 1 tbsp olive oil
- 1 small onion diced
- 3 cloves garlic minced
- 1 can 28 oz crushed tomatoes
- 4 cups chicken or vegetable broth
- 1 cup heavy cream or half and half
- 1 package 20 oz refrigerated cheese tortellini
- 1 tsp Italian seasoning
- ½ tsp salt adjust to taste
- ¼ tsp black pepper
- 1 cup fresh spinach optional but pretty
- Fresh basil + shredded Parmesan for topping
Warm the olive oil in a large pot over medium heat. Add the diced onion and sauté until soft and fragrant.
Stir in the garlic and cook for about 30 seconds.
Pour in the crushed tomatoes and broth. Add Italian seasoning, salt, and pepper. Bring everything to a gentle simmer.
