Ingredients

  • 1 tbsp olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 can 28 oz crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or half and half
  • 1 package 20 oz refrigerated cheese tortellini
  • 1 tsp Italian seasoning
  • ½ tsp salt adjust to taste
  • ¼ tsp black pepper
  • 1 cup fresh spinach optional but pretty
  • Fresh basil + shredded Parmesan for topping

Instructions

  • Warm the olive oil in a large pot over medium heat. Add the diced onion and sauté until soft and fragrant.
  • Stir in the garlic and cook for about 30 seconds.
  • Pour in the crushed tomatoes and broth. Add Italian seasoning, salt, and pepper. Bring everything to a gentle simmer.
  • Add the tortellini and cook according to the package directions (usually 5–7 minutes).
  • Reduce the heat and stir in the heavy cream.
  • Add the spinach and let it wilt into the soup.
  • Ladle into bowls and top with fresh basil and Parmesan.
