Ingredients

  • 1 lb chicken breasts or thighs cut into bite‑size pieces
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 cup dry orzo
  • 2 cups chicken broth
  • ½ cup heavy cream or half‑and‑half
  • ½ cup grated parmesan
  • 1 cup fresh spinach optional
  • 1 cup frozen peas optional
  • ½ teaspoon Italian seasoning
  • Salt & pepper to taste
  • Fresh parsley for topping

Instructions

  • Heat olive oil in a large skillet and cook chicken until golden and cooked through.
  • Add garlic and sauté for 30 seconds until fragrant
  • Stir in the dry orzo and toast for 1 minute.
  • Pour in chicken broth and bring to a simmer.
  • Cover and cook 8–10 minutes, stirring occasionally, until the orzo is tender.
  • Add cream, parmesan, Italian seasoning, and peas/spinach if using.
  • Simmer 2–3 minutes until creamy and dreamy.
  • Season with salt and pepper and top with parsley.
